Lasagna Baked Penne


Have you ever heard of Hello Fresh? They provide you with all the ingredients you will need to make dinner and the best part is they deliver everything you need to your front door. I personally have not tried it, but would love to give it a try sometime. When I went on their website to check out how much their boxes would be to subscribe, I noticed that you are able to search their recipes. Which I thought was awesome, so before you commit to a subscription you can try a few recipes to see if you would like their food. And that is exactly what I did.

I have been wanting to try different recipes, because I am someone that gets bored with the same ole’ dinners. I love to switch it up. We normally do not do a lot of “baked,” dinners so when I saw this I figured this looks pretty good and on the plus it has KALE..I love kale. And Sophia eats anything green literally.


8 oz Ground Beef

6 oz Penne (I loved the colored Penne)

1 Whole Onion

2 Garlic Cloves

4oz Kale

1 Teaspoon Dried Oregano

1/4 Cup Panko Breadcrumbs

1 Cup Mozzarella Cheese

1 Teaspoon Chili Flakes

1 Can Diced Tomatoes

2 Olive Oil

**Preheat oven to 400 degrees, it will bake for about 12-15 minutes until cheese and panic browns**


While I have my oven preheating to 400 degrees this is when I get organized. Here you will see that I cut up my onion, garlic cloves and my kale. Put your water on the stove to bring it to a boil.


Make sure you get your water to a rapid boil, I always add salt and some oil into my water. The oil helps with the noodles from sticking together and the salt adds some flavor to the noodles.


Add your noodles to the boiling water, make sure to stir them quite frequently. You want to cook your pasta until just about aldente around 9 minutes. Once that happens drain and rinse your noodles in cold water. The cold water helps them from not sticking together, and stops them from continuing to cook.


Add your oil to a hot pan. Do you know how to tell if your oil is getting hot? If it moves across your pan real fast when you tilt the pan from side to side. Also when you move the pan side to side you will start to see ripples in the oil. Once your oil is hot, add your onion cook for about 4 to 5 minutes. Keep in mind do not be flaming freddie and burn your onions. Just take your time and once they reach that nice golden color then you can add your chili flakes (I omitted them).


Then add your beef & garlic to the pan, season with oregano, salt, and pepper. Cook until beef is no longer pink but also break the beef into pieces as it cooks.


I combined everything into a massive bowl.At this point also add half of the mozzarella cheese, then toss everything together. When that is done transfer to a baking dish. The other half of your mozzarella goes on top of everything. Now you can add your panko breadcrumbs as the finally layer. Then put in the over for about 12 to 15 minutes, until the panic breadcrumbs are a golden color and cheese is melted.

We ended up loving this recipe! I ended up making it twice in two weeks! Here are some of my observations after making it twice. I actually ended up using 3 cans of diced tomatoes the second time I made this dinner, but I think it could use maybe even 4 cans. And next time I may try to use fresh mozzarella instead of bagged mozzarella. But overall I am quite please with this recipe, so I will definitely some of their other recipes in the future.
