Rain. I can not express how much I feel like Pittsburgh has gotten over the last couple of days. Cold. I can not express how cold it has been in Pittsburgh recently. Have I mentioned it is supposed to be Spring. With it being cold and rainy that last couple of days having and very active toddler couped up in the house is not exactly ideal, especially since Sophia is a nature girl and we just got over winter. So, I decided to take her to a local Jump n’ Bounce, which she loves! And in the end we both end of having a blast.
Prior to leaving for the Jump n’ Bounce I made these cute mini quiches. I figured they would be great for fueling up while we play all afternoon. And they are healthy!
Ingredients:Â
6 eggs
3 Tbsp. Whole Milk
1/4 Cup of Turkey Pepperoni
1/4 Mozzarella Cheese (shredded)
1/4 Piece of Green Pepper
3 to 4 Mushrooms
Salt & Pepper to taste
Directions:
- Preheat oven to 350 and grease a 24 count mini muffin pan.
- Whip your eggs &milk, also add salt and pepper to you liking
- Cut up all your veggies and add your cheese with your veggies
- Add veggies and cheese in with your eggs and mix until all incorporated
- Fill the greased muffin trays about 3/4 of the way up with the egg mixture.
- Bake off for about 15-18 minutes
- Allow mini quiches to to cool before removing from pan.
Denaturing an egg is also known as whipping an egg. What does that mean you may ask? When you whip an egg you are denaturing it, what happens is there are little circle particles in an egg and when they are being whipped they unravel into long strands. With the constant whipping air particles are being introduced into the egg and attaching itself to the unraveling strands. Have you ever noticed how some eggs like scrambled eggs are “wet,” that is the result of denaturing an egg. Isn’t food chemistry neat? Just a little FYI..when you hear crickets over breakfast. Break the silence!
I am so glad that Sophia is not a picky eater and loves are of her veggies especially green ones! I should have added peas for her she loves them.

She loved the Mini Quiches! She did not pick any of the veggies out, I believe she ate about 3. Adding this recipe to my recipe box for sure.
We pair grapes with everything. They are one of Sophia’s favorite fruits. I can not blame her on that one.
After we played for about three and a half hours once we returned home, Sophia passed out in my arms so easily. I miss moments like this, she is not much of ‘cuddler,’ unless she is sick or just wants to cuddle. So I definitely cherish these moments, because they do not happen that often.
