Happy Monday! When summer rolls around I look forward to those summer foods that you don’t normally make any other time of year. This cucumber salad is perfect for those gardeners that grown their own cucumbers. Especially when they end up a mass amount and have no idea what to do when them, besides secretly hand them out to their neighbors.
To be honest, I am not quite sure where this recipe came from, but my mom always makes it during the summer. So it’s a family favorite.
Ingredients:
1 Cucumber (peeled) 2 Tbsp. White Sugar
2 Tbsp. Chives (Chopped) Salt & Pepper (to taste)
2 C. Sour Cream 1/4 Tsp. Paprika
9 Tbsp. White Vinegar (to taste)
Directions
- Add Sour Cream, Sugar, Vinegar to a nice sized bowl and mix well.
- Then add your Salt & Pepper, Paprika and lastly your Chives. Mix Well.
- As your last step add all your cucumber- make sure they are peeled and sliced. Mix everything together. And refrigerate.

Here is the Sour Cream, Vinegar & Sugar. The Sugar helps cut down the acidity of the vinegar. You also want your mixture to be the consistency of pancake batter.
Add your Paprika, Salt, Pepper and mix well.
Add your Chives & mix
Add your cucumbers & mix slowly.
Here is the finished product. You can make this earlier in the day & refrigerate, so all the different ingredients marinate together. I think it tastes better once everything has the chance to marinate together. This salad pairs well with fish such as salmon or steak. I love it with steak.
Sophia loves this salad, she eats it by the spoonfuls and ends up all over her face.
Here Sophia is approximately around 9 to 10 months old .She loved it! We made it all the time last summer, because if all else failed I knew she would eat this cucumber salad.
22 months old and she still loves it!
And it still ends up all over her face.
