It is currently 10:22 P.M. and I am starving. I have not been eating a solid three meals a day lately, because we have been spending a good amount of time at the pool. So, for lunch we have been snacking on cheese, fruits and crackers etc.By the time 5 P.M rolls around I am eating dinner. I typically do not like to eat any later than 7 P.M. and normally I can shake off the “I am hungry spell,” but tonight I caved.
I have been wanting for sometime to try avocado open face sandwich. I came across this Rachael Ray recipe found in her EveryDay with Rachael Ray magazine..issue from February 2015. Do you think I was shocked when I saw it at the top of my closet? You bet. It is well over a year old, but could not have been found at a time. It was amazing! So good! And I totally did not feel guilty about eating it real late at night. I will definitely make it again for a snack after the gym or a quick breakfast.
2 Avocados ( I used one)
1 Tbsp. Fresh Lemon Juice (I did 1/2 Tbsp.)
1 small grated garlic clove
Salt & Pepper (to taste)
1 Piece of Bread of your choosing
** I reduced the recipe by half**
- Take the pit out of the avocado, then scoop out the avocado. Add your lemon juice, grated garlic, and your salt and pepper. Mash & stir.
- Toast your bread to your liking. Add avocado mixture on top of the bread . And enjoy!
