A Quick Monday Dinner


If you are anything like me, Mondays are really busy and by the time dinner rolls around I want something really quick and easy. One thing that always seems to be eaten in my house is pizza.

I love pizza, but my favorite is Margherita Pizza. There is just something about the fresh Tomato and Mozzarella…and oh my goodness fresh basil that makes me grin from ear to ear.

So, I can up with my own Margherita Pizza that is to die for. So good!

What You Need:

2 Naan Flatbread- 1 Package

Fresh Mozzarella Cheese

Fresh Basil- about 5 to 6 leaves

Garlic Cloves- about 3

1.5 TBSP. of Olive Oil

1 TBSP. of Balsamic Vinaigrette

Salt & Pepper to taste


  1. Using a Garlic press, crush the Garlic into the Olive Oil, allow to sit while preparing everything else. Preheat oven to 350 degrees.
  2. Slice about 3 pieces of Mozzarella Cheese per Naan Flatbread, and slice up Tomatoes about 2 slices per flatbread. I like mine thin. Then chop up your Basil.
  3. Using a pastry brush, brush on the Garlic Olive Oil onto each Flatbread. Lay down your Tomato and top with your fresh Mozzarella. Sprinkle a couple of Fresh Basil leaves on top of the cheese. Pop it into the oven for about 15 minutes, until the edges of the Flatbread are golden brown.
  4. Once your pizza is baked, take the left over Olive Oil and Garlic and add the Balsamic Vinaigrette and mix it up. Drizzle on top of your pizza to your liking.
  5. Cut, serve and enjoy!!



This is right before I the pizza’s into the oven.


I slightly drizzled the Olive Oil and Balsamic Vinaigrette, I didn’t want it to be overpowering!


I did add a little bit more fresh Basil on top of the pizza’s before serving!

This was the best Margherita Pizza I have had in a really long time! It was so flavorful that I would make this before I would buy one at a pizza shop. I didn’t even have to add any salt or pepper to it!

I would recommend tasting it before you add any salt or pepper to it!

This Margherita Pizza would pair really well with a salad that has apples in it or any other kind of fruit you may like.
