“I found my thrill on blueberry hill….on blueberry hill when I found you….” originally sung by Fats Domino but more importantly sung by me in the kitchen anytime I bake something that contains blueberries. It brings back memories of being down in West Virginia as child at my grandparents house. I would immediately rummage through their vinyls and play a few select records every visit; Blueberry Hill was among the few selected.
Then in high school, singing in the choir for four years; Blueberry Hill popped up one year as the selected song to sing in front of hundreds..at that point the boys snickered every time they would sing “I found my thrill on blueberry hill.”
Oh the younger years.
More importantly what got me singing Blueberry Hill is Joanna Gaines new cookbook; Magnolia Table Volume 2. I figured I would cook, bake and run my way through this pandemic.
Let’s jump right into it!
Joanna Gaines “Blueberry Muffins with Streusel Topping.”
The Streusel Ingredients
1/4 Cup Plus 1 TBSP Sugar
2 TBSP All – Purpose Flour
2 TBSP cold unsalted butter
1 -1/3 All Purpose Flour
1 tsp. Baking Powder
1/2 tsp. Kosher Salt
8 TBSP (1 stick) unsalted butter, softened.
1 cup Sugar
2 Large Eggs
1 tsp. pure vanilla extract
1/2 cup sour cream
1 cup frozen blueberries, unthawed.
First things first preheat your oven to 350 degrees. For the streusel all you do is combine the flour and sugar…then add the butter. Using a pastry blender or you can just use yours hands like how I do. You want it to be well combined..don’t let the butter melt…the mixture will crumbly. Then pop that bad boy into the fridge so everything gets hard.
That’s what she said. Sorry not sorry. DAMNIT MICHAEL SCOTT!
As for the muffins in a medium bowl stir together the flour, baking powder, and salt. With a paddle attachment cream together butter and sugar on medium speed until light in fluffy (in a separate bowl). Reduce speed to low and slowly add the eggs and vanilla. Turn mixer to medium-high speed and mix until well incorporated.
Then alternate the flour mixture and the sour cream, mix until well incorporated. Fold in the blueberries.
Spray the muffin pan with cooking spray, also use cupcake wrappers! Just do it!
Sometimes I am five….going on 32 soon…. and lick the beaters.
Using a 1/4 measuring up, I scooped the batter into the unlined muffin tin…..topped it with the streusel…popped it into the oven for between 24-28 minutes until done…not burnt; like the Banana Bread I made last Friday.
Can you say yumm? Everything came together perfectly! The blueberries didn’t burst all over the place; everything came out……well.. perfect. The only issues I ran into was my unlined muffins kinda-sorta stuck to the side of the tin.
But in the end…they tasted the same.
I plan on making a trip to Texas to visit Magnolia, but in my mind I have the entire trip planned. I would stay in Austin, Texas to explore and eat BBQ..then the next day make a trip to Magnolia in Waco..to explore and do more eating of course.
So this would definitely be a food trip in hopes of meeting Joanna and Chips Gaines so I can gush like a 10 year old.
