My Favorite Lemon Garlic Salmon

The other night I was craving Salmon like something fierce, ideally I would eat it constantly, but it can be quite expensive. Growing up I absolutely disliked it so much, but right after I had Sophia for as much as I disliked it, I ended up loving it.

Traditionally I grill my Salmon, but when you have to refill your propane, you make due with the kitchen stove and pray for the best.

Surprisingly enough it was just as fantastic!

Homemade Chicken Wrap

Every other weekend Sophia, my mom and I go to Sam’s Club to fulfill some of our groceries in bulk, which happen to be more paper products more than anything. Nonetheless, Sophia recognizes Sam’s Club for their samples on Saturdays.

We stop at literally every sample station along the way.

So, this past Saturday, we were at Sams Club and this little old woman hands me a sample of their Chicken Wrap. My first reaction was it wasn’t poor tasting by any means it was just missing something.

…..FLAVOR!

So I created my own tonight for dinner, but you can certainly make this for lunch as well!!

A Quick Monday Dinner

If you are anything like me, Mondays are really busy and by the time dinner rolls around I want something really quick and easy. One thing that always seems to be eaten in my house is pizza.

I love pizza, but my favorite is Margherita Pizza. There is just something about the fresh Tomato and Mozzarella…and oh my goodness fresh basil that makes me grin from ear to ear.

So, I can up with my own Margherita Pizza that is to die for. So good!

Summer Salad

I enjoy trying new recipes especially for summer, there seem to be more of a variety of fall and winter foods than summer foods.

By the end of May, I am so over the usual hamburger and hot dog ordeal…that even suggesting it for dinner becomes and instant no. Can anyone else relate?

Last week when I was browsing Chip and Joanna’s Magazine Magnolia I found a recipe in there that I had to try with the grilled chicken breasts we were having for dinner.

Luck must have been on my side, because the only item I did not have on had was the corn on the cob. So I ran up the street to Aldi’s and grabbed them.

Steak & Potatoes Dinner

About two weeks my friend Paula sent me this awesome email for 3 free meals from Hello Fresh. I was so ecstatic, because that meant 3 nights of dinner that I didn’t have to prepare anything.

Especially around the holidays it can be so crazy that dinner seems to be pushed to the back burner. Or pizza nights become more regular on speed dial.

This dinner was probably the most easiest dinner I have ever prepared. I think the longest part was peeling and cutting the Sweet Potatoes and Green Beans up. Dinner was prepared and served within 45 minutes. And it was delicious!

I do wish that I grilled the steak instead of pan frying it like how I was instructed. But this mama wasn’t staying out in 20 degree weather!

My favorite part was the Sweet Potatoes! I believe I am going start making more Sweet Potatoes with dinner. They were amazing, I could have just made that my dinner.

So if you are looking for a different side for dinner, I would say make the Sweet Potatoes.

Writing about them makes me want to make some now to snack on!

Make This Recipe Tonight

I made the best Pot Roast last night for dinner, that I delayed a couple of other posts to share this recipe with you!

This is actually my 4th pot roast that I have ever made..

The degree in taste went from “ok this need more salt….ok this one needs something, but I am not sure what…ok my roasts never turn out like my moms.”

We had Soup for dinner!

One of my favorite parts about fall and winter is the amount of soup I seem to consume and cook. What gets me more excited other than eating soup is when I find a good slow-cooker recipe.

Sometimes I love the idea of throwing everything into a slow-cooker and allowing it to stew for hours! Especially on those days where you have a million and one places to go.

It just makes life a little simpler!

Pasta with a Twist!

Every Wednesday I take Sophia to the library for a toddler reading class at our local library. After the reading we always end up hanging around for about an hour. The library has a ton of toys for the kids to play with, plus it give Sophia the opportunity to be around other kids.

And I can usually try to find something to make for dinner….Pinterest is awesome for dinner ideas!
