I love candy corn..wait let me rephrase that. I love the way candy corn looks, but I really dislike the way it tastes. I love the way it looks in a candy dish..maybe even used as a decoration on a cake.
They’re adorable, but I personally don’t eat them.
I thought it would be really fun to do a Candy Corn inspired drink. Non-alcoholic of course, but I am pretty sure we could make it a little more fun! But we are making it kid friendly this time!

It’s just a bunch of Hocus Pocus!
“BOOOOOOOOOOOOK!” That is what was going through my mind as I was making these late last night.
If you have ever seen the movie Hocus Pocus with Bette Midler, Sarah Jessica Parker and Kathy Najimy then you will certainly recognize Bette Midler’s “one-eyed spell book.”
This recipe originated from a website called Delish. Since I am a huge Hocus Pocus fan I knew I had to make them.

Homemade Spiced Pumpkin Coffee Creamer!!!
“Saaay what?” Yes. If this makes your heart skip a beat and bring hearts to your eyes then I have the perfect recipe to share with you.
This is from my Better Homes and Garden 100 Best Pumpkin Recipes magazine I bought about two months ago.
Last week Sophia and I met up with my friend Paula and her daughter Emma for a day in downtown Pittsburgh. I thought this would be a perfect opportunity to whip up some Spiced Pumpkin Coffee Creamer, since Paula is a Spiced Pumpkin fan.

Have you gone to any apple festivals yet? My mom and I went to one about two weeks ago with Sophia. It was so much fun! At the festival they had a barn filled with these huge, deep crates filled with Apples.
With Sophia being an apple lover, we went home with a bunch of apples! Too many actually, but then I thought it would be a great opportunity for me to make homemade apple cider.
My friend Emily shared this recipe with me several years ago, and every since then I always make it for the house around fall time.

I love cooking, especially for Sophia. She recently just turned two years and has quite the pallet. It’s not anything for her to eat Italian Olives as if they were candy.
Being a mom of a toddler that is here, there and everywhere within seconds makes it more challenging to cook food that takes a little longer to prepare. There are some days that we will eat grapes, cheese and crackers for lunch.
Whatever is fastest and easiest.
What about when you want to add some vegetables to lunch? I got just the answer!
A few weeks ago we had some left over rice and mixed vegetables from the previous dinner. My mom suggested that I throw it all in a frying pan with a little bit of butter; season it with salt and pepper. Then throw an egg in, and call it lunch.
That’s exactly what I did. And we love it!
It’s to quick and good for me not to share with you!
What You Need:
1 pkg. of Frozen Rice (whatever brand you like)
1 pkg. of Frozen Vegetables (whatever brand you like)
1 TBSP of Butter (salted)
1/2 Vegetable Oil
2 whole eggs
Salt & Pepper to taste
What To Do:
- For the frozen items follow their microwaveable instructions on the back of their bags.
- Once your rice and mixed vegetables are done. Get your frying pan hot. Place your oil and butter in the frying pan. Don’t burn the butter. If the butter and oil spit at you, turn down the heat.
- Throw your rice and mixed vegetables into the frying pan. Stir quite frequently for about 2 to 3 minutes.
- Prepare your eggs; like how you would if you were making scrambled eggs. Then pour egg mixture over top of the vegetables. And stir.
- Once your eggs are cooked; add some salt and pepper.
*Please Note: You can use sesame oil in replace of vegetable oil. Also I only use 1/2 bag of the rice and vegetables when I make it for Sophia and I. This recipe also makes great leftovers!*
Do you have any quick lunch ideas to share?
Last year when Sophia was turning one I loved the birthday chalk boards that swamped my Pinterest page. The thought of ordering one was really tempting and convenient, but knowing that I could make one for about twelve dollars was even more appealing.
Plus making it yourself gives it more personal touch, and you can design it anyway you like.

Sophia’s birthday was Confetti theme this year, so I knew that I wanted to have Confetti Balloons all over the place. To be honest I was not quite sure how to go about making them. So, after doing a good amount of research I found it was going to be easier and much more cost efficient if I did them myself, rather than ordering them. Or have someone do them for me.
For the confetti I cut up old tissue paper that I received from prior birthdays, baby showers, holidays..etc. Many party stores that I contacted that have done Confetti Balloons for customers in the past do not recommend using the glitter confetti. Due to the balloons popping once helium is injected into the balloon.

Does this qualify as a Bean Dip?
That’s what I call it! The first time I had this was when I was working as a CSR for medical equipment and my manager brought it in on Friday. Let’s just say I have been hooked ever since..I have the recipe memorized…it’s my go to recipe for parties..and it does make a fantastic Vegetarian Quesadillas for dinner.
I have paired this bean dip with crackers, but so far my favorite is Frito Scoops! So yummy!

It’s all about Buttercream today folks!
It is one of my favorite things to make, and it is not as hard as you may think. All it takes is a little patience. One of my favorite buttercream’s to make is Italian Buttercream, you can’t go wrong with it. It’s definitely my go to buttercream when I am decorating or frosting a cake.
It is not greasy, heavy or overly sweet. It’s perfect.
Let’s get started….

Sophia is officially TWO! This past weekend was her Confetti Birthday Party! I had a ball planning this party. A few months back I wasn’t not sure if I was going to have a theme except “Birthday Party.” Thrilling I know.
Until one very late night on Pinterest I came across a cake that I loved and became my inspiration. I made the cake above, this cake was my inspiration that I found on Pinterest.
