Sophia’s First Homemade Pie

Sophia is my little helper in the kitchen. No matter what I am doing she always ends up helping me out, and I LOVE it. It only seems to be natural that she enjoys being in the kitchen as much as I do, she comes from a family of cooks and bakers on both sides. It’s in her blood. I hope she continues to enjoy it as she gets older.

She always drags a chair over to the counter (like a foot away from where I am standing). Not matter what, as soon as I stand in front of the counter within seconds I have my Sous Chef!

Sophia climbs up and says “help..help..mama…peas,” with her big green eyes. It melts my heart every time…I mean..whose wouldn’t?

Mint Hot Chocolate

I am kicking this season off with Mint Hot Chocolate. I stumbled across this recipe off of Pinterest several years ago. I believe I saved it to my “must try food folder,” never actually  got around to making it.

The intention was there.

The other night at Target I was searching for an Advent Calendar and I came across one that just so happens to be my background in the photo above.

I have no decorations up yet…except for Sophia’s Advent Calendar…so it’s definitely serving a purpose!

On December 1st I made Sophia her first Mint Hot Chocolate!

Did she try it? No.

She said “ew no mama.” I wasn’t expecting that reaction! I think it was the green color…

Thoughts?

So not judging by Sophia’s reaction…the drink was really good…sweet…and oh so easy to make. A great holiday accent!

What You Need: 

2 Cups of Milk                                                          1 tsp. Peppermint Extract

2 Cups of Half & Half                                             Few drops of Green Food Coloring

1/2 bag of White Chocolate Chips                      Crushed Andes Candies & Whipped Cream

Instructions:

  1. Heat Milk and Half & Half in a pot over medium heat; be careful not to burn it.
  2. Add White Chocolate Chips..stirring constantly.
  3. Add Peppermint Extract, then add your few drops of food coloring
  4. Andes Candies and Whipped Cream for garnish (optional)

Milk and Half & Half are heating up. I stirred mine quite frequently.

Then I added the White Chocolate Chips. Please stir it constantly…you don’t want to burn the milk of chocolate.

I put the Peppermint Extract in the mixture. Stir…then I immediately added the Green Food Coloring. I also found that 8 drops of the Green Food Coloring was the perfect mint color.

Mix the food coloring until well combined. At this point your Hot Chocolate should be hot. If not let it heat up a little bit more…if it’s hot take it off the heat!

This is from my Better Homes and Garden 100 Best Pumpkin Recipes magazine I bought about two months ago.

Last week Sophia and I met up with my friend Paula and her daughter Emma for a day in downtown Pittsburgh. I thought this would be a perfect opportunity to whip up some Spiced Pumpkin Coffee Creamer, since Paula is a Spiced Pumpkin fan.

Last year when Sophia was turning one I loved the birthday chalk boards that swamped my Pinterest page. The thought of ordering one was really tempting and convenient, but knowing that I could make one for about twelve dollars was even more appealing.

Plus making it yourself gives it more personal touch, and you can design it anyway you like.

How to Make Confetti Balloons!

Sophia’s birthday was Confetti theme this year, so I knew that I wanted to have Confetti Balloons all over the place. To be honest I was not quite sure how to go about making them. So, after doing a good amount of research I found it was going to be easier and much more cost efficient if I did them myself, rather than ordering them. Or have someone do them for me.

For the confetti I cut up old tissue paper that I received from prior birthdays, baby showers, holidays..etc. Many party stores that I contacted that have done Confetti Balloons for customers in the past do not recommend using the glitter confetti. Due to the balloons popping once helium is injected into the balloon.

The Best Dip Ever!

Does this qualify as a Bean Dip?

That’s what I call it! The first time I had this was when I was working as a CSR for medical equipment and my manager brought it in on Friday. Let’s just say I have been hooked ever since..I have the recipe memorized…it’s my go to recipe for parties..and it does make a fantastic Vegetarian Quesadillas for dinner.

I have paired this bean dip with crackers, but so far my favorite is Frito Scoops! So yummy!

Tropical Sunset Drinks

I am a total avid youtube watcher, it’s a serious addiction. I have been following a few channels for quite sometime now, but one of my favorite channels is called HeyKayli. I just love her, she is so crafty and down -to -earth. If I was a ‘youtuber,’ I would want a channel like hers.

The other day I saw she made some non-alcoholic tropical drinks with her two kids. And I thought “I have to make those for Sophia.” Considering we only have about a month left of summer these drinks are perfect way to celebrate the season a little bit longer.

Banana Yogurt Bites

Today I am sharing with you another healthy recipe that I enjoy myself, especially when I am on the go! I wish I would have known about this recipe when I was in school, it definitely would have made eating breakfast a lot easier. Since I am not typically a breakfast eater this would be perfect to have on hand.

Yes, we are using more Greek Yogurt!!

What You Need:

Chobani Vanilla Greek Yogurt (or any flavor or brand)

1 Banana (or two..or three..depends on how many you want to make)

Blueberry Crumble Granola with Flaxseed (any kind of granola you want)

Wax Paper

Container to put the Yogurt Banana Bites in to freeze

What To Do:

  1. Peel your banana, cut it up in nice thick slices. Put your yogurt & granola in a separate bowl.
  2. Cover the bottom of your container with the wax paper.
  3. Take one slice of your banana and cover it with the yogurt. (not to heavy).
  4. Then roll it is the granola. If there is to much yogurt on the banana, then granola will roll off.
  5. Set it on the wax paper in your container, continue to do the same for the rest.
  6. Once you have coated all your bananas, put then in the freezer for about 6 hours or overnight.
  7. And Enjoy!

**Please note: if your granola is to chunky, put it in plastic bag, hit it a few times with a rolling pin…don’t make dust!**

Rolling my banana in yogurt!

The Blueberry Crumble is my favorite, if you can find it at your local grocery store..try it out! What did I do with the left over yogurt and granola? Around 11pm when I was working I mixed everything up and ate it…it was heavenly!

All ready to go in the freezer! I let mine sit overnight.

The next day! Be careful, they are frozen and really cold!

These would be great to give your kids as they are running out the door to catch their bus or even an after school snack.

Healthy Yogurt Fruit Bars

I was at the store the other day picking up some odds and ends, when I came across popsicle molds. So, I thought it would be a perfect week to share my Greek Yogurt Fruit Bars. This is also a much healthier version of “ice cream,” that you could even give to the kiddos for breakfast or it would make a perfect late night snack.
