Do you want another excuse to fire up the grill this week? Look no further! Yesterday, for dinner my mom and I made Hawaiian Chicken Kabobs. They were delish!
I am really particular about how chicken is prepared…like extremely picky. I can thank Adrian for that one.
What you need:
1 Box KC Masterpiece BBQ Sauce & Dry Rub, Sweet Honey
1 3/4 C. Pineapple Juice
4 Large boneless skinless, Chicken Breasts
1 C. Mushrooms, halved
1 Red Bell Pepper
1 Orange Bell Pepper
1 Green Bell Pepper
1 C. Pineapple, diced
1 Purple Onion
- Combine 1 3/4 Pineapple Juice and 1 Pouch KC Masterpiece BBQ Sauce & Dry Rub. Set Aside.
- Either cut the chicken up into bite size cubes or leave the chicken breast whole. Marinate them in the ingredients above that you set aside. Let them marinate for at least 30 minutes. We did ours for about 6 hours.
- Wash & dry your veggies..and cut them up.
- Preheat your grill on high
- Assemble the chicken veggies on skewers any way you want to. Tip: The mushrooms and pineapples make good stoppers.
- Grill for about 12-16 minutes until cooked through. Tip: Brush the finished kabobs with the left over marinate.
** You can find the original recipe here on Yummly**
We marinated our chicken in the fridge 6 hours, if your chicken breasts are really thick you can poke holes in them. Like how you would to a baked potato before putting it in the oven.
We ended up using Shiitake Mushrooms, because the local little store didn’t have whole mushrooms..only the pre-cut ones.
Assembling the Kabobs!
Prior to grilling.
The rest of the marinade was brushed on the Chicken Kabobs.
Look at these beauties!
We paired ours with Oriental Rice, that my grandma Sue in Hawaii taught my mom.
What kind of Kabobs do you like?

For the longest time I have been wanting to make a homemade ice cream. When I was at Le Cordon Bleu I was taught how to make it, but it was sort of a process. Since Sophia is here..there…and everywhere within a blink of an eye, quick treats are right up my alley.
This recipe can be found at Some of This and That blog. The author did hers as a galaxy theme. My inspiration was my new Alex and Ani Unicorn bracelet, when I think of Unicorns I think tons of colors! Plus, I thought that Sophia would enjoy all the bright colors!

My friend Paula texted me last week and told me about this awesome deal that Blue Apron was advertising, basically I would get 3 meals (for two people) for ten dollars. So I immediately jumped on that opportunity.
Last night was our first night of trying Blue Apron, we had their Brown Butter Cod. I loved it! I have never made Cod before so we were definitely pleased with the results.

My mom makes the best egg rolls known to man kind. I am really picky with egg rolls. This summer I have been having a really hard time find a Chinese restaurant where their egg rolls aren’t mushy inside. So I have been dying for my moms egg rolls they are super good and very versatile.
I am going to share with you her recipe that she made up herself. A lot of my moms recipes are to taste meaning your add as much or as little as you want of certain spices.

Sophia and I have have been going to our local pool recently several days a week this summer. She is my little fish. Anyways I have been trying to incorporate more fruits into our diets this summer and let me say it has been such a success. Thankfully, Sophia isn’t a picky eater and loves fruit.
I have been having a really bad fruit obsession I am always buying it. Right now we have Raspberries, Blueberries, Watermelon, Mango, Strawberries, peaches and an apple (only 1) all on hand.
When we wake up in the morning I will make us Oatmeal, because I know it is something that we both enjoy. And it usually holds us over until lunch time.
On days we go to the pool I tend to pack a variety of snacks. I always carry water bottles in our cooler, one gatorade and of course our fruit. I mainly eat the cashews, blueberries and cheese. Sophia eats a little bit of everything, but I think her least favorite are the blueberries.
As we hit close to August, I am trying to think of some other types of snacks to bring…something a little different. I am aiming for healthy items..but give us more of a variety.
Does anyone have any ideas? What is in your pool snack bag?
What is a Palacsinta you may ask yourself. A Palacsinta is the Hungarian name for Crepes or Crepe Suzette. In my house they are known as Crepes or Palacsintas. My mom has this old Hungarian cookbook that I adore. So I am going to share with you one of my favorite recipes from the cook book. And the best thing is they are super east to make.

On Saturday night my best friend Charnaye came over for dinner and a movie. This has always been one of our favorite things to do together ever since we were in high school, and we do it several times a year. I went to Target and bought ten peaches they were .71 cents each and in beautiful condition. Have I told you that I have an obsession with fruit this summer? I can’t get enough of it. If you were decided to randomly stop by my house you would notice I have an over abundance of fruit. And yes it all get eaten.
So, I decided to make Peach Iced Tea! If you missed my Homemade Iced Tea you can check it out here.

My entire family loves oatmeal. I prefer homemade oatmeal compared to instant oatmeal, but that doesn’t mean that if you look in my pantry you won’t find instant Quaker Oatmeal. If we don’t make instant we have Strawberry N’ Cream or Maple Brown Sugar on hand.
I am going to share with you my favorite ways to make stovetop oatmeal.

It is currently 10:22 P.M. and I am starving. I have not been eating a solid three meals a day lately, because we have been spending a good amount of time at the pool. So, for lunch we have been snacking on cheese, fruits and crackers etc.By the time 5 P.M rolls around I am eating dinner. I typically do not like to eat any later than 7 P.M. and normally I can shake off the “I am hungry spell,” but tonight I caved.

Two of Sophia’s favorite things to eat are Apples and Peanut Butter. Every time we go grocery shopping I always end up buying a bunch of apples and then she ends up eating one while we grocery shop. Hey, I am not going to complain it is heathy! So while thinking of different fun and healthy snacks for Sophia and I, I thought why don’t I just make “Apple Cookies.” And use peanut butter as the icing. So this is what I came up with!
