What I Made for Dinner

The other day I was craving homemade roast….of all things to crave…roast…really?!?! So that night I pulled the roast out of our second freezer and allowed it to thaw out overnight.

Typically, when I make dinner I usually do my own thing…but this particular time I came across Pioneer Womans Perfect Pot Roast Recipe and I knew it was something I had to make.

If you know anything about me, I am a huge Pioneer Woman fan! Everything that I have every made of hers, I absolutely loooooved it!

So, I had a funny feeling that we were going to enjoy her Pot Roast.

When life gives you Lemons make…Jo’s Favorite Lemon Pie! I have been going through a wicked sweet tooth recently that I just can’t get a grasp on. It doesn’t matter how many yoga classes I take or how many times I try to distract myself…nothing and I mean nothing seems to be helping. Until….I came across Jo’s Favorite Lemon Pie.

But let me back up…I have a huge confession and obsession. I am a HUGE Joanna and Chip Gaines fan from HGTV Fixer Upper! My mom and I will watch them for hours. Their style is basically my style, everything they do I love. So when I came across Jo’s Favorite Lemon Pie recipe in their magazine…my inner obsession came out…

And I had to try it!

It is probably the best pie I have ever had. Hands down. I mean it’s rich, packed with flavor and lets say not legging pants wearing friendly…but perfect for a cheat day…or week. Whatever tickles your fancy…I will do a week cheat please!

Fruity Pebbles on What?

You might be thinking…what is this? I would be…if I wasn’t the one writing this post. Just a little bit of honesty….BUT…if you thought what on earth are those Fruity Pebbles covering…then you might be a little shocked if I were to tell you it’s chicken…yeah that’s right…chicken.

Who Knew!

Last weekend I invited my cousin Jess over for dinner; along with her oldest son Parker and hew newest addition Jace for some… (hold the phone)…Fruity Pebble Chicken. I thought this would be a fun dinner for the kiddos…colorful…and chicken fingers…need I say more.

So last night we adventured into the world of Fruity Pebbles Chicken Fingers.

Initially, I was very skeptical..the thought of Fruity Pebbles on chicken just honestly did not sound very appealing by any means. Just yuck..right? So, to keep it from being a completely disappointing meal if that was going to be the case…I also made just plain old regular Chicken Fingers. You know just in case…

But

I. Was. Surprised.

Shocked. Even.

Because.

They Were Delicious.

They were like eating a a very mild Honey Chicken, a slight sweetness…but not gross…

Just Perfect.

So if you are looking for something fun to feed the kids or want to try something out of the ordinary…Fruity Pebbles Chicken Fingers.

Food for Thought..I want to meet the person that thought “put Fruity Pebbles on chicken.”

Every New Years Eve my family and I end up ordering Chinese for dinner. It’s tradition. We kick back and relax while feasting on all kinds of Chinese food. This year we decided to switch things up a bit and make Chinese ourselves.

My friend Charnaye stopped over for my moms Egg Rolls this year. I swear everyone will stop what they are doing to come over and have some. We are always more than willing so share. Pumpkin Spice Doughnut Holes

Are you going to a Thanksgiving brunch anytime soon? I thought this recipe would be fun to share you  especially if you have have more than one place to go on Thanksgiving Day.

This year I am only going to my moms. We typically have the same stuff every Thanksgiving, but I think this year we are going to be switching it up a bit.

As long as my mom doesn’t get rid of her Sweet Potato Casserole, then switching it up is fine with me!!

These Pumpkin Spice Doughnut Holes are really good and super easy to make! They took me about 45 minutes from finish to end! Sophia helped me roll them into balls, so some of them are “squargigles,” but it makes them more fun. Sophia loves to help! Especially in the kitchen!

Brandied Sweet Potato Pie

Nothing reminds me of Thanksgiving more than pie. One of may favorite parts of Thanksgiving is after dinner and everyone is in a Turkey comatose state, I love sneaking off downstairs to the game room with a piece of pie; and watch t.v. of course.

I was reading in a magazine earlier this week that stated “northern states prefer Pumpkin Pie over Sweet Potato Pie. Whereas Southern States prefer Sweet Potato Pie over Pumpkin Pie.” That got me thinking because every Thanksgiving we never have Sweet Potato Pie only Pumpkin Pie.

So I thought I would switch things up a bit this year and make Sweet Potato Pie..and boy was I glad I made it.

This recipe came from Food Network Magazine “Time for Turkey,” edition. And let me just say I am a sucker for those food magazines by the check out lines at the grocery store.

Homemade Vanilla Steamers

When I was pregnant with Sophia I completely cut out caffeine, except for when I dealt  with morning sickness..I did allow myself non-caffeinated Ginger Ale.

I am personally not a huge coffee drinker, I think that I may have two cups a week..maybe. So, cutting it out during pregnancy was not an issue.

If I met some friends at Starbucks for a coffee date, I was really stumped as to what to drink at the time. Until someone told me about Vanilla Steamers.

Then I had a Starbucks pregnancy drink!

The Best Dip Ever!

Does this qualify as a Bean Dip?

That’s what I call it! The first time I had this was when I was working as a CSR for medical equipment and my manager brought it in on Friday. Let’s just say I have been hooked ever since..I have the recipe memorized…it’s my go to recipe for parties..and it does make a fantastic Vegetarian Quesadillas for dinner.

I have paired this bean dip with crackers, but so far my favorite is Frito Scoops! So yummy!

Sophia is officially TWO! This past weekend was her Confetti Birthday Party! I had a ball planning this party. A few months back I wasn’t not sure if I was going to have a theme except “Birthday Party.” Thrilling I know.

Until one very late night on Pinterest I came across a cake that I loved and became my inspiration. I made the cake above, this cake was my inspiration that I found on Pinterest.

Banana Yogurt Bites

Today I am sharing with you another healthy recipe that I enjoy myself, especially when I am on the go! I wish I would have known about this recipe when I was in school, it definitely would have made eating breakfast a lot easier. Since I am not typically a breakfast eater this would be perfect to have on hand.

Yes, we are using more Greek Yogurt!!

What You Need:

Chobani Vanilla Greek Yogurt (or any flavor or brand)

1 Banana (or two..or three..depends on how many you want to make)

Blueberry Crumble Granola with Flaxseed (any kind of granola you want)

Wax Paper

Container to put the Yogurt Banana Bites in to freeze

What To Do:

  1. Peel your banana, cut it up in nice thick slices. Put your yogurt & granola in a separate bowl.
  2. Cover the bottom of your container with the wax paper.
  3. Take one slice of your banana and cover it with the yogurt. (not to heavy).
  4. Then roll it is the granola. If there is to much yogurt on the banana, then granola will roll off.
  5. Set it on the wax paper in your container, continue to do the same for the rest.
  6. Once you have coated all your bananas, put then in the freezer for about 6 hours or overnight.
  7. And Enjoy!

**Please note: if your granola is to chunky, put it in plastic bag, hit it a few times with a rolling pin…don’t make dust!**

The Blueberry Crumble is my favorite, if you can find it at your local grocery store..try it out! What did I do with the left over yogurt and granola? Around 11pm when I was working I mixed everything up and ate it…it was heavenly!

The next day! Be careful, they are frozen and really cold!

These would be great to give your kids as they are running out the door to catch their bus or even an after school snack.
