Every Wednesday I take Sophia to the library for a toddler reading class at our local library. After the reading we always end up hanging around for about an hour. The library has a ton of toys for the kids to play with, plus it give Sophia the opportunity to be around other kids.

And I can usually try to find something to make for dinner….Pinterest is awesome for dinner ideas!

Let’s Talk About Buttercream

It’s all about Buttercream today folks!

It is one of my favorite things to make, and it is not as hard as you may think. All it takes is a little patience. One of my favorite buttercream’s to make is Italian Buttercream, you can’t go wrong with it. It’s definitely my go to buttercream when I am decorating or frosting a cake.

It is not greasy, heavy or overly sweet. It’s perfect.

Confetti Party

Sophia is officially TWO! This past weekend was her Confetti Birthday Party! I had a ball planning this party. A few months back I wasn’t not sure if I was going to have a theme except “Birthday Party.” Thrilling I know.

Until one very late night on Pinterest I came across a cake that I loved and became my inspiration. I made the cake above, this cake was my inspiration that I found on Pinterest.

Banana Yogurt Bites

Today I am sharing with you another healthy recipe that I enjoy myself, especially when I am on the go! I wish I would have known about this recipe when I was in school, it definitely would have made eating breakfast a lot easier. Since I am not typically a breakfast eater this would be perfect to have on hand.

Yes, we are using more Greek Yogurt!!

What You Need:

Chobani Vanilla Greek Yogurt (or any flavor or brand)

1 Banana (or two..or three..depends on how many you want to make)

Blueberry Crumble Granola with Flaxseed (any kind of granola you want)

Wax Paper

Container to put the Yogurt Banana Bites in to freeze

What To Do:

  1. Peel your banana, cut it up in nice thick slices. Put your yogurt & granola in a separate bowl.
  2. Cover the bottom of your container with the wax paper.
  3. Take one slice of your banana and cover it with the yogurt. (not to heavy).
  4. Then roll it is the granola. If there is to much yogurt on the banana, then granola will roll off.
  5. Set it on the wax paper in your container, continue to do the same for the rest.
  6. Once you have coated all your bananas, put then in the freezer for about 6 hours or overnight.
  7. And Enjoy!

**Please note: if your granola is to chunky, put it in plastic bag, hit it a few times with a rolling pin…don’t make dust!**

The Blueberry Crumble is my favorite, if you can find it at your local grocery store..try it out! What did I do with the left over yogurt and granola? Around 11pm when I was working I mixed everything up and ate it…it was heavenly!

The next day! Be careful, they are frozen and really cold!

These would be great to give your kids as they are running out the door to catch their bus or even an after school snack.

Homemade Unicorn Ice Cream

For the longest time I have been wanting to make a homemade ice cream. When I was at Le Cordon Bleu I was taught how to make it, but it was sort of a process. Since Sophia is here..there…and everywhere within a blink of an eye, quick treats are right up my alley.

This recipe can be found at Some of This and That blog. The author did hers as a galaxy theme. My inspiration was my new Alex and Ani Unicorn bracelet, when I think of Unicorns I think tons of colors! Plus, I thought that Sophia would enjoy all the bright colors!

What Are Your Pool Snacks?

IMG_3776Sophia and I have have been going to our local pool recently several days a week this summer. She is my little fish. Anyways I have been trying to incorporate more fruits into our diets this summer and let me say it has been such a success. Thankfully, Sophia isn’t a picky eater and loves fruit.

I have been having a really bad fruit obsession I am always buying it. Right now we have Raspberries, Blueberries, Watermelon, Mango, Strawberries, peaches and an apple (only 1) all on hand.

When we wake up in the morning I will make us Oatmeal, because I know it is something that we both enjoy. And it usually holds us over until lunch time.

On days we go to the pool I tend to pack a variety of snacks. I always carry water bottles in our cooler, one gatorade and of course our fruit. I mainly eat the cashews, blueberries and cheese. Sophia eats a little bit of everything, but I think her least favorite are the blueberries.

As we hit close to August, I am trying to think of some other types of snacks to bring…something a little different. I am aiming for healthy items..but give us more of a variety.

Does anyone have any ideas? What is in your pool snack bag?

 

 

Apple Cookie Snacks

Two of Sophia’s favorite things to eat are Apples and Peanut Butter. Every time we go grocery shopping I always end up buying a bunch of apples and then she ends up eating one while we grocery shop. Hey, I am not going to complain it is heathy! So while thinking of different fun and healthy snacks for Sophia and I, I thought why don’t I just make “Apple Cookies.” And use peanut butter as the icing. So this is what I came up with!

Easy Avocado Breakfast

I came across this recipe sometime last summer and absolutely loved it! I love avocado, which was not always the case. I remember once years ago when I was in Hawaii horse back riding down a mountain and at the end the instructors gave us these loaded sandwiches. And on them was slices of avocado. I remember not being thrilled about the avocado, picking it off and stuffing them inside of my napkin. I did not want to offend the instructors that made us the sandwiches. Now, many years later I now have a new love for avocados, if I could just teleport back in time when I threw my avocados away I would eat mine and then steal my brothers. If you like avocados and eggs why not give this super easy recipe a try for breakfast or a snack. On the bright side it is also gluten free!
