Friday Fives

It’s FRRRIIIIIIIDAAAAY (in the Feeny call voice…please tell me you know what I am talking about…Boy Meets World) ! We made it, another week, but my weeks are such a blur; I am desperate for normalcy as I suspect most people are at this point. But here we are, so lets just make the best of it.

It’s another Chrissy Teigen recipe I am throwing your way! Another good one….another one that made me say “yumm…” I believe is quite possibly the best and most easiest recipe I have made this week. But my god it was good….I want to share it with the world…come over and I will give you some! I share.

When I was making it I was quite apprehensive to as if I was actually going to like it…it had all the right ingredients, but Apple Cider Vinegar..ehh…I drink it, but I don’t drink it warmed up. It made the entire house stink; Sophia said “mom I need some fresh air…this is rank.”

Surprisingly three hour later, that stench that lingered in the air for hours turned itself into probably the best salad I have ever had.

I recently bought this nighty from Target about a week ago, I have yet to wear it; but it’s soft and so comfy. Definitely summer friendly.

This bralette in Lilac, is beautiful..so soft. No itchy lace here.

This shirt I recently bought because I am in dire need of shirts, it’s lightweight and kind of perfect.

My favorite summer sandal. I wear my birks almost everyday in the summer; you’ll hardly ever catch me in flip-flips. I don’t find them to be very comfortable. The Birkenstock sandals mold to your foot once they are broken in; which makes them the best, I’ve had mine for two years and never looked back.

Flip Your Wig Pancake

Remember that movie Practical Magic the scene where they flip pancakes in the air? One of my favorite scenes, but we are not flipping pancakes because I don’t know how to do that; but this recipe can make you flip your wig. I mean I don’t wear a wig, but it is wig flippin’ good! And oh so easy to make; which is major brownie points in my book!!

The recipe calls for you to use a blender, at 8am in the morning I was not going to bring that bad boy out…morning coffee has not kicked in and if you’re anything like me…I love my mornings quiet and easy.

For my dry ingredients I just put them through a very fine strainer; then added my wet ingredients into the dry.

Then whisked my ingredients into submission, until they were all combined and ready to go.

Melt that butter baby…did you really think we were going to get through a recipe without butter. I’m afraid not, I mean I know I have mentioned on here before..there are not such thing as calories. Butter is very equivalent to garlic in my cooking….if I can add it I will.

Although I will openly admit…I added waaaaay….waaaaay to much butter. I really don’t measure…I definitely eye ball it up and down.

Once the bottom was nicely coated with the butter I added some of the batter…..

Then placed it in the oven for about 5 to 7 minutes

Then this happened….

Where the hell did my cast iron skillet go? I definitely added way to much batter, you can’t even see my cast iron skillet. Whose to judge…no one is to see it (as I share mine with millions)…

This one is my fourth one, each one became increasingly smaller…more ideal. But is smaller really better even with food? Does size really matter? Unless it’s a chicken wing (bar food)…nothing and I mean NOTHING can justify those parakeet wings, but we are not here to yet discuss my strange ways with certain food. Parakeet wings make me cringe…you could probably chase me around the room with one…and have the same reaction if you were chasing me with a lady bug….yeah I don’t like those either.

I just dug into that bad boy; I wasn’t waiting…it just sort of happened between the slight sugar and caffein rush. Yet I am finding myself saying once again…another recipe added to my favorites. What I think I like most about this recipe is that fact that it wasn’t heavy like a normal pancake; I felt like I could still go running after and not feel like you can roll me down the street.

One another note, anyone watch 90 Day Fiance? I have it recording right now and all I can think about is Ed and Rosemarie. My mom got me hooked onto it last weekend, I don’t typically watch reality tv, but Ed puts me in tears laughing. I just can’t with those two; I know I couldn’t do what Ed does. Last week I shot wine across the room laughing….

What I Made for Dinner

The other day I was craving homemade roast….of all things to crave…roast…really?!?! So that night I pulled the roast out of our second freezer and allowed it to thaw out overnight.

Typically, when I make dinner I usually do my own thing…but this particular time I came across Pioneer Womans Perfect Pot Roast Recipe and I knew it was something I had to make.

If you know anything about me, I am a huge Pioneer Woman fan! Everything that I have every made of hers, I absolutely loooooved it!

So, I had a funny feeling that we were going to enjoy her Pot Roast.

Summer Salad

I enjoy trying new recipes especially for summer, there seem to be more of a variety of fall and winter foods than summer foods.

By the end of May, I am so over the usual hamburger and hot dog ordeal…that even suggesting it for dinner becomes and instant no. Can anyone else relate?

Last week when I was browsing Chip and Joanna’s Magazine Magnolia I found a recipe in there that I had to try with the grilled chicken breasts we were having for dinner.

Luck must have been on my side, because the only item I did not have on had was the corn on the cob. So I ran up the street to Aldi’s and grabbed them.

Healthy Yogurt Fruit Bars

I was at the store the other day picking up some odds and ends, when I came across popsicle molds. So, I thought it would be a perfect week to share my Greek Yogurt Fruit Bars. This is also a much healthier version of “ice cream,” that you could even give to the kiddos for breakfast or it would make a perfect late night snack.

Mama’s Homemade Egg Rolls

My mom makes the best egg rolls known to man kind. I am really picky with egg rolls. This summer I have been having a really hard time find a Chinese restaurant where their egg rolls aren’t mushy inside. So I have been dying for my moms egg rolls they are super good and very versatile.

I am going to share with you her recipe that she made up herself. A lot of my moms recipes are to taste meaning your add as much or as little as you want of certain spices.

Summer Peach Iced Tea

On Saturday night my best friend Charnaye came over for dinner and a movie. This has always been one of our favorite things to do together ever since we were in high school, and we do it several times a year. I went to Target and bought ten peaches they were .71 cents each and in beautiful condition. Have I told you that I have an obsession with fruit this summer? I can’t get enough of it. If you were decided to randomly stop by my house you would notice I have an over abundance of fruit. And yes it all get eaten.
