Unicorn Hot Chocolate

For about a week Pittsburgh has been more snowy and cold than it has been all winter long. Just a few weeks ago we hit 78 degrees…it was heaven, but I must admit I am really anxious for April. With the cold weather upon us still…..

I thought it would be fun to put a twist to your normal Hot Chocolate and make Unicorn Hot Chocolate. Plus, I knew that Sophia would just love it.

Banana Yogurt Bites

Today I am sharing with you another healthy recipe that I enjoy myself, especially when I am on the go! I wish I would have known about this recipe when I was in school, it definitely would have made eating breakfast a lot easier. Since I am not typically a breakfast eater this would be perfect to have on hand.

Yes, we are using more Greek Yogurt!!

What You Need:

Chobani Vanilla Greek Yogurt (or any flavor or brand)

1 Banana (or two..or three..depends on how many you want to make)

Blueberry Crumble Granola with Flaxseed (any kind of granola you want)

Wax Paper

Container to put the Yogurt Banana Bites in to freeze

What To Do:

  1. Peel your banana, cut it up in nice thick slices. Put your yogurt & granola in a separate bowl.
  2. Cover the bottom of your container with the wax paper.
  3. Take one slice of your banana and cover it with the yogurt. (not to heavy).
  4. Then roll it is the granola. If there is to much yogurt on the banana, then granola will roll off.
  5. Set it on the wax paper in your container, continue to do the same for the rest.
  6. Once you have coated all your bananas, put then in the freezer for about 6 hours or overnight.
  7. And Enjoy!

**Please note: if your granola is to chunky, put it in plastic bag, hit it a few times with a rolling pin…don’t make dust!**

The Blueberry Crumble is my favorite, if you can find it at your local grocery store..try it out! What did I do with the left over yogurt and granola? Around 11pm when I was working I mixed everything up and ate it…it was heavenly!

All ready to go in the freezer! I let mine sit overnight.

The next day! Be careful, they are frozen and really cold!

These would be great to give your kids as they are running out the door to catch their bus or even an after school snack.

I was at the store the other day picking up some odds and ends, when I came across popsicle molds. So, I thought it would be a perfect week to share my Greek Yogurt Fruit Bars. This is also a much healthier version of “ice cream,” that you could even give to the kiddos for breakfast or it would make a perfect late night snack.

Summer Cucumber Salad

Happy Monday! When summer rolls around I look forward to those summer foods that you don’t normally make any other time of year. This cucumber salad is perfect for those gardeners that grown their own cucumbers. Especially when they end up a mass amount and have no idea what to do when them, besides secretly hand them out to their neighbors.

To be honest, I am not quite sure where this recipe came from, but my mom always makes it during the summer. So it’s a family favorite.

Apple Cookie Snacks

Two of Sophia’s favorite things to eat are Apples and Peanut Butter. Every time we go grocery shopping I always end up buying a bunch of apples and then she ends up eating one while we grocery shop. Hey, I am not going to complain it is heathy! So while thinking of different fun and healthy snacks for Sophia and I, I thought why don’t I just make “Apple Cookies.” And use peanut butter as the icing. So this is what I came up with!

ZA Nights..

TGIF. My days are usually very hectic, Sophia and I are always on the run. Always. She is definitely my partner in crime. By the time Friday finally rolls around all I can think about is taking the easy way out with…..dinner. Not that I do not enjoy cooking and coming up with different recipes to share, but I like to designate Fridays to Pizza night or ZA if you are a scrabble player. Next time you have odd letters and you happen to have a “Z,” in the mix,  make ZA, it is an easy eleven points unless your get happen to get lucky enough triple word score or a double letter. ZA works every time.

Mini Quiches & a Ninja

Rain. I can not express how much I feel like Pittsburgh has gotten over the last couple of days. Cold. I can not express how cold it has been in Pittsburgh recently. Have I mentioned it is supposed to be Spring. With it being cold and rainy that last couple of days having and very active toddler couped up in the house is not exactly ideal, especially since Sophia is a nature girl and we just got over winter. So, I decided to take her to a local Jump n’ Bounce, which she loves! And in the end we both end of having a blast.

Homemade Ice Tea

Tis’ the season for homemade iced tea. As far back as I could remember once spring made its grand appearance, so did this drink to our dinner table. Ever since I was taught how to make it I honestly can not stop. I want to try all kind of variations of iced tea this summer, but I figured that it would be in everyones’ best interest to start with a basic iced tea.
