Do you follow Kristina Kuzmic on Facebook or Instagram? If you don’t…you should!! I do, I believe I have watched every video she has ever made; she is my alter ego. Her mom truth is the best, and absolutely relatable.

If you follow her on Instagram, a few days ago she made a minute video about her homemade Pumpkin Spice Latte…it had me at…Pumpkin and easy to make.

Once Sophia was fast asleep, I brewed a fresh pot of coffee and made her homemade creamer!

My Favorite Lemon Garlic Salmon

The other night I was craving Salmon like something fierce, ideally I would eat it constantly, but it can be quite expensive. Growing up I absolutely disliked it so much, but right after I had Sophia for as much as I disliked it, I ended up loving it.

Traditionally I grill my Salmon, but when you have to refill your propane, you make due with the kitchen stove and pray for the best.

Surprisingly enough it was just as fantastic!

Spring & Summer Flashback

We have officially entered my favorite season of all time…FALL….! I just love everything about this time of year, from the clothes, weather, food…just everything. If I could live in the fall season all year around, I would be absolutely happy. Personally speaking I do not like extreme hot or cold weather…that’s what makes fall perfect…

Except for today…we are welcoming fall weather with a high of 85 degrees and Sophia is sick, so with that in mind….it does not feel like fall, but I am hopeful in the coming weeks that the weather will be cooler.

Sophia woke up with a fever with no indication of the night before that she would be sick. I have been keeping her hydrated, she has no desire to eat anything and I am monitoring her fever…just hoping this Motrin kicks in soon..poor kid.

Anyways, I have decided to do a Spring and Summer roundup of unseen photos and links to older blog posts…

Homemade Chicken Wrap

Every other weekend Sophia, my mom and I go to Sam’s Club to fulfill some of our groceries in bulk, which happen to be more paper products more than anything. Nonetheless, Sophia recognizes Sam’s Club for their samples on Saturdays.

We stop at literally every sample station along the way.

So, this past Saturday, we were at Sams Club and this little old woman hands me a sample of their Chicken Wrap. My first reaction was it wasn’t poor tasting by any means it was just missing something.

…..FLAVOR!

So I created my own tonight for dinner, but you can certainly make this for lunch as well!!

An Unplugged Weekend

A week ago today my family and I spent a long weekend down in West Virginia to visit Grandma Carol. This is a trip that I have been trying to do for several years ever since Sophia was born, but life has gotten in the way of many things.  This long weekend trip just fell onto my lap at the very last minute possible.

Thankfully, there was boarding at Jimmy’s camp so I was able to send him for a long weekend with his buddies. Jimmy loves camp so it’s definitely a win-win situation.

While we were driving down we all made bets whether or not Grandma Carol had wifi. I was the only one that said that should would have it.

But…

I was WRONG.

A Quick Monday Dinner

If you are anything like me, Mondays are really busy and by the time dinner rolls around I want something really quick and easy. One thing that always seems to be eaten in my house is pizza.

I love pizza, but my favorite is Margherita Pizza. There is just something about the fresh Tomato and Mozzarella…and oh my goodness fresh basil that makes me grin from ear to ear.

So, I can up with my own Margherita Pizza that is to die for. So good!

Ugly, but Good.. No – Bake Cookies

These cookies are definitely my go-to cookies to make in the summer, literally for some simple reason….I don’t need to bake them! Plus they are Peanut Butter and Chocolate…need I say more?

I have been making these cookies for Sophia and I in the summer for the last two years that keep resurfacing every year!

Look, I totally get it….. they’re aren’t pretty and probably the most ugliest cookie you’ll ever see, but they totally makeup for it in taste. I promise!
